Turkey Philly Cheese Steak Sub (20 Servings)

Instructions
  1. Preheat braising pan to 350 degrees.
  1. Add vegetable oil to the braising pan. Add sliced onions and green peppers to pan and sauté for approximately 5 minutes, or until vegetables are tender.
  1. Add turkey tenderloin medallions to braising pan, mix thoroughly to incorporate all ingredients. Cook for 10-12 minutes.
  1. Transfer turkey and vegetable mixture to 2” half long pans and hold in warmer until service.
  1. Prepare queso cheese per manufacturer instructions. Transfer to 2” half long pans and hold in warmer until service.
  1. Place hoagie rolls in warming cabinet 5-10 minutes prior to service.
  1. Assemble Turkey Philly Cheesesteak by placing 1 cup of turkey and vegetable mixture on a hoagie roll, followed by 1.5 oz. of queso cheese sauce.

Mediterranean Turkey BLT Wrap (20 Servings)

  1. Preheat oven to 350 degrees.
  1. Place turkey bacon on sheet pan with parchment paper. Cook for 4-6 minutes or until desired crispiness.
  1. Place tortillas in hot holding cabinet 10 minutes prior to assembly.
  1. Transfer into 4" shotgun pans. Cover and place in warmer.
  1. Assemble BLT wraps in assembly line fashion by placing one Tbs of tzatziki sauce on tortilla followed by one leaf lettuce, 2 tomato slices, 3 cucumber slices, 3 slices of red onion, and 6 slices of turkey bacon.
  1. Fold BLT wrap envelope style, slice diagonally through center of wrap.
  1. Transfer to 2” hotel pans and hold in cooler until service.

Tokyo Turkey Breakfast Biscuit (20 Servings)

  1. Thaw turkey medallions under refrigeration one day in advance if frozen.
  1. Preheat oven to 375°F.
  1. Place biscuits on lined sheet pans and bake for 3-5 minutes.
  1. Place turkey medallions in a large mixing bowl and toss with 1 oz of Teriyaki Glaze until evenly coated.
  1. Arrange glazed turkey medallions in a single layer on lined sheet pans. Bake for 5–7 minutes.
  1. Prepare egg patties according to manufacturer’s instructions.
  1. Assemble sandwich: Split biscuit in half and layer with 1 egg patty and 1.8 oz of cooked Teriyaki glazed turkey medallions. Close sandwich and wrap if holding.
  1. Transfer to steam table pan or warming unit.

  1. Add 3 oz. of Turkey Medallions, 1/2 oz. of mushrooms, 1/2 oz. of spinach, and 1 oz. of shredded carrots to bowl.

  1. Dice tomatoes, slice red onions, cut limes into 8 wedges, and drain black beans.
  1. Build salads in assembly line fashion by placing 1 cup of chopped romaine lettuce in bottom of container.
  1. Place 6 oz spoodle of turkey tenderloin in center of lettuce.
  1. Distribute the following ingredients evenly around the turkey:
  • 2 tbsp of diced tomatoes
  • 2 tbsp of black beans
  • 2 tbsp of corn
  • 4 slices of red onion
  • 2 tbsp of pickled jalapenos
  • ½ oz of shredded cheddar cheese
  • 1 lime wedge
  1. Serve with choice of salad dressing.
